On the grill and charcoal

Wild lobster tail from New Brunswick cooked on shell, grilled and poached in garlic butter, lemon basil gremolata, guacamole tacos with pistachio and lime.




3 little ducklings enjoy taffy

Foie gras parfait with caramelized gravy, maple shavings, roasted passion fruit.



Entrée 2:

2.0 immersion trip

New Brunswick oyster, yuzu jelly, clam chowder, blood sorrel and Lac Saint-Pierre caviar.



A fisherman in the countryside

Line-caught sea bass cooked in hay. Alaska King Crab eggnog.




Bœuf and beef: from East to West

From Quebec to Alberta, one’s been ironed and ash-seared, the other braised. The third is a Wagyu caught in the middle.


3-course desserts

End of the evening by the fireside

Pre-dessert: crispy molten chocolate, all-you-can-eat marshmallows, Gianduja digestif.

Dessert: desserts to Sennheiser’s beat with Thierry Mugler perfume.
